Great
New Things On The Way!
I've
been away working on lots of new things and can't wait to share
them all with you! Last time, I wrote about my new gardening
adventure, and it is going really well. I will be
blogging and sharing more soon! Here's a picture of our happy sunflower! 
Fermentation
Craze!
Here
are two recipes that I've been doing and are sooooo awesome for the digestive
tract and overall health. Also, fermented drinks help acidify the colon
and make an inhospitable environment for parasites and other disease-causing
microorganisms. Yes, the colon should be slightly acidic for good health.
The
first one you can now find in health food stores, but I wanted to make
it myself so I could drink it every day and not break the bank. It is just
fermented beet juice. So good for you and so easy to make!

Fermented
Beet Juice
Just
purchase as many beets as you feel like blending and have a big enough
jar for, and blend in your high powered blender with filtered
water. I usually buy about three bunches of beets, and it takes filiing the
blender up 2-3 times with beets and water to get the job done.
Strain
this mixture into a large jar like you see in the picture,
add a little kefir or yogurt starter, stir
well
and seal
the
jar. Place
the
jar
in a
dark closet
for about
3 days, and you will have a fizzing, bubbly, delicious tonic. And for
my second fermented addiction:
Chica
De Maiz
In
Peru, this drink is very popular. It is sometimes
made with quinoa. I buy a bag of organic frozen corn and a bag of
organic frozen strawberries from Trader Joes for this recipe. Ingredients: 2
cups corn
1/2
cup of strawberries 1/2
cup of coconut sugar
10
cups of water
1
package of culture starter
In a large pot, combine the corn and water. Place over high
heat and bring to boil, stirring now and then with a wooden spoon and scraping
the bottom of the pot to prevent sticking and burning. When the mixture comes
to a full boil, lower the heat and gently simmer, covered, for 2 hours, stirring
now and then. Remove from heat and allow to cool.
Once
cool, strain off the corn and put the water to the side. Add 1 cup corn
and 1/2 cup of strawberries and 1 cup of corn water to blender.
(Use the remaining 1 cup of corn as you wish - you won't need it anymore
for this recipe). Blend well and strain through a nut milk bag. Add this
juice to the corn water
along
with the
sugar
and
culture
starter.
Pour
into air tight glass containers and store in a dark place. Let ferment
for 2-3 days. Serve with a garnish of lemon slice.
